As promised, here’s an update post to report back on my circular shopping trip as well as recipes for what I made with my groceries. My total spend on the meal ended up being $20.72 because I decided to purchase a little over a pound of salmon and add an avocado to top off the fish. Even with these additions, the cost came out to $5.18 a person…and I was able to save over $5.00 off the total price of the bill. Just think if you saved $5.00 off your family dinner cost every night – that’s an extra $35 a week, adding up to $260 a year!
Enough money talk…let’s talk food! Here’s what I made, and how you can recreate the meal (serves 4):
Herbed Avocado Salmon
- Place salmon steak pieces in a pan drizzled lightly with olive oil (I used four pieces, about 4 ounces each)
- Pan sear at medium heat, flipping each piece every couple minutes. Continue until lightly browned then switch to low heat
- Drizzle salmon with lemon juice and add spices as desired (I used ground black pepper, rosemary, oregano & basil)
- Remove from heat and serve topped with a large slice of avocado
- Cut four potatoes into cubes one inch or smaller (leave peel on!)
- Place cubes in a pot of boiling water with a dash of salt until boiling
- Once water is boiling, remove pot from heat and strain potatoes
- Mash potatoes in a bowl with a masher or fork, slowly adding in milk and pads of butter
- When potatoes are of desirable consistency, stir in fresh garlic or garlic powder to taste
Mixed greens
- Rinse mixed greens and toss in a bowl
- Halve cherry tomatoes and stir in with the greens
- Drizzle salad with balsamic or your dressing of choice, and serve
All in all, shopping by the circular was easy and inspired me to cook a dish I’d been thinking of making for awhile. I’ll definitely continue to consult the store’s deals before planning meals to save money and discover new foods and dishes! Check out the final result here:
